Production

Harvested by hand in October. Remontage twice daily for a fortnight. Fermented at a controlled temperature, then the wine goes into tanks until it is bottled.

 

Tasting notes

Bright violet red. On the nose it has notes of fresh fruit, cherries and blackberries. Well balanced with soft tannins and a pleasant sweet and sour taste. Mature and elegant with persistent retronasal.

 

Pairing

White and red meat grilled or chargrilled, stews, game (hare, rabbit, partridge, etc.), aged and semi aged cheeses, pâtés, cured meats and salt cured fish.
